What's this plant

what is this?

My parents live on a farm in Central Arkansas and have had a very interesting summer. They have had some surprise growth in some strange places. We have successfully grown full size watermelons from our compost pile, and pumpkins from the burn pile. The compost pile is self explanatory, but the pumpkins were a shock. Every year when they rot after halloween we throw them on the burn pile or let the horses snack if they’re interested. After years of this we had a surprise pumpkin patch pop up, and let the babies pick them while they’re small (rabbits were already starting to snack). We found this massive plant in the burn pile as well, and I was curious if anyone can identify it. We made up a story that it is a magic beanstalk for the kids to climb up one day. Any other ideas? It has a very thick strong stalk, strange shaped leaves, and flowering buds at the top.
