Admittedly I have neglected these plants, mostly because they were not growing at all for months on end. I’ve kept them watered but that’s about it. In the last couple weeks 3 of them have shot up like this but I can’t find anything about this online. Any ideas?

They’ve bolted
It’s bolted ie flowered, which is the eventual purpose of every lettuce plant. Less sun helps – for example, planting where they only get sun in the morning.
Too much warmth and light has led to bolting. This happens to mine every damn year.
