Apologies for the bad pictures. I want to gift the main piece to my really good friend that moved away as a surprise, and I want to keep the two leaves, but I'm not sure if that's doable with the current system it has. What do you think?

You should be able to cut here and create two seperate plants. It will probably take awhile for the original cutting to form a new GP but likely will be fine.
I probably wouldn’t yet if it were me, looks like it came from a single node cutting so the node could be spent. I’d wait until you get a couple more leaves and then chop, you could also air layer to get some roots going while you wait!
