Light green sweet peppers taste bitter


I’m growing sweet peppers from seed that has been passed down and around the local Italian community for at least 65 years. Some start dark green and some this lighter green. All turn red eventually if the growing season is long enough.
I love the taste of the dark green ones but the lighter ones are bitter. Is there a way to remove the bitterness so I can use them in salads?

    As they ripen they produce sugar which is why the red and dark green ones taste sweeter and the unripe taste more bitter.

    recommendation – in the future, just let them mature more.
