I recently bought a house with a property. I’m still trying to figure out when it rains heavily a pretty steady stream of water flows downhill through the stream. What would happen if I removed those large stones that are in the pictures in order to make my life easier long mowing?

You would have less stones. Har har.
Replace with french drain. Then the rocks continue to exist underground to drain water away and prevent erosion, but still allow you to mow the top.
Increased soil erosion but I can’t tell if the grass is growing over the rocks or there are just barely any rocks there. How often does this area get water and how much water it gets would be the first questions I would ask. After that it’s deciding where you can direct the water and what materials would best suit the location and the amount of water going to that area.
Let it rain real hard and go out and stare at the stones. I bet somebody put them there for a reason. It’s most likely water related.
