I want to get rid of this ugly alley view of my rv entrance. Wanted to do it myself. Would it be easier to just over seed and put grass? Or pavers? Or other recommendations of what do with this space? I don't park cars/rv here.

If you’re not going to park anything there it could be very simple. Maybe grass. Or maybe you decide to use it to hide trash cans and other stuff from public view. Maybe you’d like some sort of all weather path from the front of the house to the back.
The main thing to do is make sure it drains properly. Now is the time to fix the grade if the area ponds, etc. It gets harder to do once you improve it.
That would be a lot of pavers, but it’s doable. Do to the amount of shade it gets grass is probably iffy at best. If it was mine I would pour concrete and brush it. That would also give you a nice patio space when nothing is there.
Location? High desert, low desert, water restrictions, etc?
I’d start parking cars or an RV there if you don’t already.
Bird baths, homes, and snacks. flowers for the bees and butterflies. Build some boxes for the bats.
