I love baked sweet potatoes. When I cut them open, I add lots of butter, salt, pepper, and a steak, and I'm a happy camper!
Are you planning to do with so much. You could feed the needy.. You could give some to a soup kitchen.
I would have put the basket on the scale first and then filled it becauseI would have trouble lifting a full basket.

I need purple sweet potatoes, never had those. We are in the process of distributing 1000 lbs of sweet potatoes – our fall tradition. I also need to be preserving some! I love mine baked & served with fresh collards, peas, onions, tomatoes & corn bread- my perfect meal! Congrats on a bountiful harvest! ❤

You might try dehydrating the sweet potatoes and then powdering them and vacuum packing for longer-term storage.
