Heavy frosts and the first snow flurries of the season force me to harvest the last of the potatoes along with some beets, sunchokes, onions and carrots for a family thanksgiving dinner this weekend.

Shawn, have you considered cutting the main stem off even with the ground instead of pulling them up? I only pull up root crops. Everything else composts in the ground and by doing that I don’t disturb the eco system and also helps control weed growth
Harvesting Jerusalem artichokes and sweet potatoes when they still are green…will not give you a great production. Wait till they are almost dry. Don't worry if the soil will become colder. The rhizomes are protected! 😉

Trim the stems of those sunchokes down to 1 foot, and put the empty roots back into the ground. Next year you'll have amazing bulbs.
