Just after looking a a lot of the comments here there are many videos in the other parts of the world that never have heard of pressure canning and use just the water bath canning, just some info for many who are wondering. I have never done pressure canning and only done limited water bath canning. I usually do either dehydrating or freezing or fermenting for preserving everything i have done over the years in my life. Now that we have freeze drying, that is another alternative but expensive but probably the best alternative. JMHO.

  7. I always thought cooking potatoes should be started in cold water and not added to boiling water like Darrell did. It must be different when canning potatoes . Great video. Thank you.

  10. Is canning salt the same as kosher salt? I have some kosher salt, or do I need canning salt? Difference? Thank you😘

  11. The PC lid is heavy and I do not put it back on until all jars of potatoes are loaded. Jars, produce and water will remain hot enough during this process. I did not start PC canning until the age of 63. I was scared and read the instruction manual about 4 times before ever being brave enough to start. I always follow the Blue book instructions to a T with each canning session. Canning is safe and you wont blow the kitchen up if you read and follow your instructions. Y'all are blessed to have an experienced :"teacher"! I do babysit the gauge during the whole time still. I wont leave the kitchen until that burner gets turned off for the cool down when timer goes off LOL! Enjoy your new learned skill!

  12. You guys are hysterical! I can relate to all of this. I bought an All American Canner a couple of years ago and just this year I AM set to try it! I'm about to have a huge potato harvest so perhaps I will can them too 🙂

  13. Thank you Darrell and Kaye for this good information and teaching. Nice to know. I still do not have a pressure canner but that may come. Birdies are eating my grapes and seedlings so have to twart with netting and nylon tulle. Also hooray it sprinkled this afternoon here – real rain elsewhere. Monsoons. So needed.

  14. It is so much better to process food with friends! I have had a pasta making gathering a few times where all the ladies brought ingredients for what they would like to make and then we rolled it out in my pasta press to make whatever size noodle they wanted or raviolis stuffed with like Lemon Chicken, etc. We all went home with fresh pasta to dry or ate it fresh. I had pasta for 6 different dishes from 6 of us. It was so much fun! You guys look like you were having a fabulous time!

  15. I always put the label in the front. Have that caner heating up when you heat up the water to put in the jars at the same time. Do RAW pack with potatoes. I fear that those potatoes will be mashed potatoes.

  16. That is how I grew my pie pumpkins last year. The trellis was beautiful with 14 beautiful pie pumpkins.

  17. Kaye, Arent you in the North Carolina mountains? Your pressure gauge is 15 not 10. Over 1,000 feet is 15.

  18. I have an All American 921 canner. Best you can buy. Been canning with it for years. One of the best investments I have ever made. Despite that, I review times and pressures for everything each time I can. Can never be too safe. And I have often bought fresh produce at the market or grocery store to can. Always so much better than commercially canned goods! You two ladies owe Darrell. He is a very patient and most excellent instructor! 🙂

  19. As a child I thought the Chef on tv in the 1960's was saying "Bone out your teeth". LOL, the family had a good laugh over that.

  20. When I was growing up, my mom and her neighbor friends had canning parties. My dad had beautiful solid wood stained wall shelves built in the utility room. Mom kept them full of fruits, vegetables and preserves. She was a wonderful cook and we always had fresh vegetables. I never learned to can until after she passed away last fall. She would be proud.
