Thanks, for all the great information, please strive for a green house , it would be great to see all those vegetables growing so lusciously I live in Florida so we grow everything all the time no weather problems. You can make pumpkin and lentil stew that is a great way to use the pumpkin. Also pumpkin fritters with a spot of ginger and black pepper in the flour mixture and it would be a great way to use up the pumpkin. There's so many good foods you can make with those pumpkin mmm .

I would be your farm "wife" in a heart beat
Here in the California Sierra, we grow a big winter garden which has a lot of root crops like carrots rutabaga turnips, parsnips, as well as cabbages, Brussel sprouts, cauliflower, broccoli, spinach etc, which we cover with 3 feet of straw (not hay) which acts as an insulator so that from now to spring we can simply push the straw aside to harvest whatever we want to gather.

Whenever I make (vegan) pumpkin pie I use a bit of Garam Masala, as many of the spices in it are identical or similar to pumpkin pie spice, and the more exotic ones like black pepper add a bit more depth to the flavor.
I'd be interested to see if you could do a version of pumpkin pie that was even more South Asian focused. I know pumpkin is really big in Afghani food for example.
