Try planting some rhubarb it’s very low maintenance and once established will keep growing just got to cut off when it’s nice and red.

I am growing a lemon tree here in Canada… start indoors for the first few years. Most seeds will die in winter, the ones who will have the best chances of survival, will grow in indoors winter; I start my tree seeds in winter to improve their chances of survival. Many fruits grow really well in cold climates and lemon is one of them and I live about 7 hours North drive from you. Same with pomegranate and some apples.
Try growing celery maybe?
