Old blankets would work just fine. The same thing happened to my brassicas with the last freeze but they bounced right back when it started warming up again. Good luck fam. 👍🏽
Most of it will bounce back. We have a few more days of this crazy weather but they will mostly bounce back and yes they are still eatable. The only thing I covered up was my swiss chard. The broccoli may not because what you are harvesting are flowers. I cut what was ready on the broccoli and kept it moving. This is life in the backyard. 🙏

Dark brassicas usually bounce back when they warm back up, especially collards, turnips, kale, and mustards.
