There are so many different varieties of eggplant, so how do you choose the right one for your garden? I recommend that you chose the cultivar based on what you plan to do with it. The large round eggplants like Black Beauty and Rosa Bianca, are best for dishes like eggplant parmesan and baba ghanoush dip. The long and thin cultivars like Long Ping Tung, are best for Asian dishes like stir fries and frying in crispy panko bread crumbs. The small cherry sized eggplants like Thai Lavender Frog are great for roasting or skewering on the grill.
