Working In The Veggie Garden | Forget Me Nots & Asparagus Salad [NY, USA] E13



Blossom time, growing asparagus, enjoying the summer garden, using herbs, having a friend over for lunch on the porch

IN THE KITCHEN
Roasted Asparagus Salad with Mint and Feta
Serves 2

4 cups lettuce
red cabbage sliced thinly
snap peas sliced diagonally
asparagus for 2 servings
olive oil
feta
mint
salt and pepper
edible flowers

Dressing
1/2 shallot
4 tablespoons rice vinegar
4 tablespoons olive oil
1 teaspoon sugar
1/2 teaspoon mustard powder
salt and pepper

-Heat oven to 450″
-Place asparagus on a baking sheet and drizzle with olive oil and season with salt and pepper. Bake for 6 to 8 minutes and remove from oven.
-To make dressing finely dice the shallot and put in a screw top jar. Add the rest of the dressing ingredients. Place lid on jar and shake.
-To make salad place lettuce, cabbage and peas in a large bowl. Drizzle with some of the dressing and toss. Plate onto 2 plates. Top with roasted asparagus, feta, fresh mint, and flowers. Serve the rest of the dressing on the side.

    Hope the rains of the last few days have not touched your part of NY. We are on the border of NH/VT and so much flooding all around us but we are safe and dry.
