Many Kale varieties can survive winters that have freezing nights and freezing ground. I am in Maryland Zone 7. Kale plants can take frost. I let mine grow well into November and still harvest it. Come late February or Early March, I cut it back. I get leaves, buds and flowers I can eat. After I harvest it a 2nd time, I remove it and plant new kale.
