Planting garlic in fall will allow the garlic time to get rooted in and established for the coming winter. During winter, the plants won’t do a whole lot. Come spring, with good rich soil, they’ll take off and form the bulb that you’ll later harvest in late spring or early summer. You can store some of the bulbs to plant again the next fall, which basically means you’ll never have to buy garlic again.

*About Garlic:* Garlic (_Allium sativum_) differs from onion in that its bulb is composed of about 6-12 cloves arranged inside a papery bulb cover. Garlic grows best in full sun in well-drained, fertile, loamy soils with a soil pH between 6.2 and 6.5. Bulbs will be small if the soil is excessively dry, and irregular in shape if the soil becomes compacted, making compost really important. Garlic must be planted in the Fall to permit full development. Plant early enough in the season because vegetative growth ceases when the bulb develops in response to longer days and warmer temperatures in the Spring.
