The problem I ran into is that the peppers harvested at the very end of the season were still green, because I needed to bring them inside before the frost hits. They always got too soggy and went moldy on me. This is why I have to dry them in the oven or dehydrator.
Funny story. My husband's great grandmother dried chilis like that and his grandmother got into them at the age of 3 thinking they were shiny red candy. We were told she did not get punished as the pain of eating them was punishment enough.. lol

i use a dehydrator. it is so much faster.
I have tons of Ortegas that look like that as well as plump green ones.
I am not sure what to do with all the green ones: getting the skins off is such a pain!
Any help would be appreciated – for both the fully ripe (what use is a dried Ortega) – and ways to process the fresh green ones .
Does this work for peppers like Anaheim or Poblano?

I think it depends on the size of the pepper I’ve hung Serranos when green they tuned red and dried no mold.
