Nick shares with you a much loved recipe which he is renowned for – tomato rubbed on bread, or Pane con Pomedoro.

His children grew up requesting, making and loving this recipe. Plus, it’s healthy, fresh, quick, and easy to prepare.

A fantastic way to use up your ripe tomatoes in summer.

Once you try tomato on bread you won’t want to try it any other way. Simply perfection.

Ingredients

Fresh ripe juicy tomatoes
Salt
Olive oil
Dried oregano
Sliced Pane Di Casa or homemade bread (best if 1-2 days old, or can be toasted first)

Cut the tomato in half and liberally squeeze the juice and pulp over both sides of a slice of bread.

Sprinkle with a pinch of salt and dried oregano. Drizzle bread with extra virgin olive oil.

Enjoy!!

** Reserve the pulp if you like and dress with oregano, salt and oil. **
