Foraging for Beginners: Beech-leaf Salad

There is so much in our gardens and out in the countryside that looks great and tastes great too. The leaves of the beech tree are one such edible delight! Best eaten in spring, and only when the leaves are a light green and very young. Add them to salads in small measure or simply pick one of a hedge as you’re passing and nibble away!

I hope you find this garden tip useful and start foraging your own edible leaves!

*** Note of Caution: Never eat anything unless you are 100% certain what it is! ***
