No, I wouldn't want to eat it… I'm allergic to many vegetables & fruits (plus dint like the taste of most veggies). I dint want to find out if I'm allergic.

I've never ate that kind of cactus, but my ex wife's sister made cactus and it was good, tasted like green beans. I also eat cactus pears.

The problem is that some of those cactus take years to grow that big so they are not a sustainable food source. And by eating them you could be wiping them out of the ecosystem.
