I disagree. Beets can certainly become crowded out. They will absolutely not grow as large as they would have if they’d had enough space. That is why the guideline exists. I know from experience, and soon you will as well.
We tried this 2 years ago and all of our beets were golf ball size. Tried again last year and they were tennis ball size. Trying again this year with improved, softer soil. Results get better with time and loose soil.

This won't work if you have rabbits. I planted beets 5 times this spring. I have no beets. Rabbits find beets irresistible.

I can grow most vegetables amazingly but my root crops never form :/
