It's just growing sort of tall and I'm not sure what to do with it. I tried to notch it awhile back without success. The trunk is pretty skinny. Should I chop it? Trim bottom leaves? Leave alone?
What do you mean? You just admire it, but be sure and turn it 1/4 turn every so often, so it won’t lean into the light. You can lop it 1/3 of the way down. It’ll sprout right below the cut.

Often pinch off the top buds(blocking it grows taller),that will irritate more buds grow along the trunk…..the trunk will grow thicker and thicker later
