Too many Blueberries in the freezer, time to experiment. Blueberries in Lime, Lemon and Bitters Jelly.

    Made it up as I went, 500g of homegrown frozen blueberries, slightly thawed so some of the juice started running.

    2 Tablespoons of Gelatin powder, add a little water and allow it to “bloom”. Add 1 cup sugar and 1/3 cup of Lime, Lemon and Bitters cordial mix (https://www.coles.com.au/product/bickford's-lemon-lime-and-bitters-cordial-750ml-6875359). Add enough very hot water to dissolve gelatin and sugar (about 450ml). Stir to dissolve and let rest, it gets a bit foamy.

    Add the blueberries and juice, then pour into container/s. I used a glass loaf tin, but silicone cupcake moulds would be a better option as the blueberries float and the loaf does not “slice” cleanly. Let rest to cool and gel, then move to the fridge to set fully.

    Next time I will make the jelly out of Noble One ([https://shop.debortoli.com.au/brands/noble-one](https://shop.debortoli.com.au/brands/noble-one)) or Elderflower Cordial.
