I’m wondering why they let them grow tall. I thought only the young shoots are used, do they need to let it go to seed first and harvest it’s second year? Or are bigger plants used for something?

If they are just getting established, they would leave the crop alone and not harvest any for a few years. Once it is mature enough, they don’t take the entire plant either, so that it can grow its energy stores and come back next year.
