    Corn smut. It’s an infection. Totally edible though. As a matter of fact in Mexico it’s called huitlacoche and it’s considered a delicacy

    It’s soo good. (If you like mushrooms, haha!) You can look up some huitlacoche recipes but basically you just sauté it with onion and garlic, then add cilantro and salt to taste. Typically used as a taco or quesadilla filling. The flavor is like an earthy, corn-flavored mushroom.

    Just a warning about your corn fungus, only the immature galls are good for eating. Harvest them when they’re green or silver and firm. Mature galls are black and completely full of spores, which is not tasty 🙁

    Huitlacoche/corn smut! I had some in a quesadilla once. It was so delicious! It felt like corn without the hull, and tasted like it corn and mushrooms had a baby. I went back the next day for a other one. 10/10.

    What’s the history on the first person to eat it? Was his name Mikie? How hungry does someone have to be to try this? Possibly, a dare? … later who decided this was a delicacy? Maybe someone with a bumper crop of corn smut, peddling it as a delicacy?

    Can you post a video of you smooshing it and cutting into it? I don’t recommend eating it. So remove it from the garden and just have some funsies with it honestly
