They’ll be purple instead of pink later in the season. Sadly they lose their color when cooked, and most of it when dried.

Love them. I plant them every years. Very traditional where i come from. We eat them mostly as a salad with vinegar and pumpkin seed oil, Sometimes as a soup or with breadrumbs roasted in Butter.
