We finally grew enough beans to can our own! However, this is how they turned out. We followed all the right steps. Why are they discolored? Are they safe?

I have read before it’s usually normal for green beans to turn a little reddish tint color after canning not harmful, it can also happen if air is exposed to them such as the lid not being sealed that good, if you heard a snap though it should be perfectly fine. I haven’t personally canned beans yet so if you notice anything else that’s off about it i wouldn’t risk it but other than that i don’t think there’s an issue as long as the proper canning method was performed.

Canned beans my whole childhood and can confirm this is normal for a little discoloration.
