California Garden TV: How to Make Sauerkraut (from Homegrown Cabbage). Garden to Table Sauerkraut Recipe.

In this Self Sufficient Sunday video, I take homegrown organic garden crops (Cabbage) and show you how to make sauerkraut. I’ll take you through the process step by step. Full garden to table recipe below! Urban garden or homestead, you can grow your own cabbage and make sauerkraut.

Ingredients

1 1/2 – 2 lbs cabbage
2 to 5 tsp. Sea salt (not iodized)

Instructions
Take off outer leaves. Cut cabbage in quarters. Cut cores out. Cut the cabbages in thin slices may use mandolin. Put slices in bowl sprinkle 1 tsp salt over slices and keep working until liquid brine starts to form. Put 1/3 cup water mix some more. Taste and if needs more salt add a tsp at a time until it tastes salty enough but not over salty and keep mixing. Put the cabbage in pint jars until packed down. Put the liquid in jars until totally covered burp air out of cabbage Put lids on screw on rings. Put in dark closet. Check every couple of days and burp if there is any air in them. It will take two to three weeks and you will have sauerkraut.
