A few rookie questions


So. After lifeling tradional gardening, I've jumped both feet into hydro as part of a goal to go as off grid as possible on our little farm and be able to grow veggies year round.

I started with one of the small counter top setups and successfully started peppers and tomatoes but was unsuccessful in transplanting the tomatoes to a larger vessel (I waited way too long). I'd like to move the peppers now and start some lettuce, spinach, herbs and strawberries on the counter top, as well as get another batch of tomatoes going.

Any tips on successfully moving the peppers? Also any tips on successfully starting the other plants? I'm building a larger rack and reflective area in our basement to accommodate the larger grow.

I'm also a bit stumped on proper fert selection. I've made sure ph and everything is good, but that's all I've done aside from using the fert in the photos. On my initial start, I used the granular supplied with the kit.
