This is one of those things that once you know it… it makes sense. Loose leaf lettuce will easily grow new leaves if you leave the roots in the ground when you harvest it. Sometimes called ‘cut and come again’. Just cut off the leaves and leave the roots in the ground. You can get a second harvest!
