Here is a tip, idk if all know it or not… but any type of vegetables 🥕 🫘 🥒 cauliflower cabbage etc if u keep them with lime, lemon in the freezer then those vegetables will remain fresh for months it will stay so fresh the some of those vegetable will grow roots( carrots) or saplings( cabbage and cauliflower) on them

I plump up green onions and celery this way if they get soft. I never thought about doing that for other vegetables, thanks for the tip.

Root veggies shouldn't ever be put in the fridge. These will last months if kept cool, & dry.

You can rehydrate cucumbers by soaking them as well.
Another thing, cucumbers and squash last much longer on the counter than in the fridge. You can also I store veggies using a vacuum sealer.
