My neighbour cut down overhanging branches from my maple tree. Is it likely to die due to over-pruning or be at risk of falling due to uneven weight distribution?
If they die because of their actions I believe they are then responsible for replacing with trees of similar maturity, which would cost a lot of money – might be worth notifying them of this. (I’m not a lawyer and this is not legal advise).

Probably wont die but doing this even at this time of year is a massive shock to the tree, the cuts dont look great so it will probably let rot in the tree unless you tidy it up and also now the trees look crap

It’s a mature tree, they would need ladders and a chainsaw. They didn’t just wake up and do it.
