Vegetable gardening is great retirement hobby. Gives you exercise while you grow healthier foods. That turns to cooking and preserving so you can have your produce year round.
Work on developing that for a few years before you get crazy adding other hobbies.
Don’t put catfish in the pond. They out compete everything else in small water holes.

If money wasn’t an issue I would build a fence around my entire 12 acres.

See those two trees over there on the right that are about 10ft apart? Hammock. Then, sit and watch for a year. What happens in every season? Where does the water run to? Where are the frost pockets? Watch the sun. How high does that pond get in the spring? Are all the trees healthy? etc, etc
Then, fruit & nut trees, gardens, infrastructure, house
