Did I get duped by an unskilled mason?

Newbie here – appreciate your help.

Background: this 300 sf patio was professionally installed 12 years ago, with careful attention to leveling. Last week a local mason came by to discuss pressure washing and re-sanding the joints. He noticed some cracking of a concrete door slab that abuts a corner of the patio (that I planned on filling and bonding in a separate project) and attributed the cause to be “rainwater seeping in from a non-level patio.” He said I needed to pull out the entire patio to re-level it. Yesterday the mason completed ~95% of the work and it looks terrible. See photos.

There are uneven gaps on both the perimeter (along Belgian block) and throughout the interior, when previously everything was neatly flush / even across all inner / outer edges. He attributed this to “so many different sized pavers” in the pattern, which makes no sense as they fit neatly just 3 days earlier. He spent hours measuring and re-measuring each slab, even cutting some. Now I have a patio that looks worse, and still need to buy more pavers to replace some that had “gone bad.”

Does any of this make sense? Specific questions:
1. Is it normal for pavers not to fit back into a patio? It seems they’d label / map them to return to the same spot(?)
2. Would an unleveled patio even create a water draining issue sufficient to crack a cement slab? There was zero pooling / puddling of rain water in that area. Maybe it’s just a 100-yr old house settling?
3. If, indeed, the patio leveling was bad, which created poor water drainage, which damaged the concrete slab….. did the ENTIRE patio need to be ripped out to solve for a problem in just one corner?
4. Is it normal to cut stone on site? The massive gray plumes resulted in a thick layer of gray dust covering not only my entire property, patio furniture, garden beds / plants and lawn, but also that of my neighbor’s. I spent most of today doing damage control.
5. Would it take 40+ hours for 2 people to do this work (mason + his helper)? I had the patio re-leveled when it was first installed 12 yrs ago and it took 3 guys less than a day to put it back together (completely aligned).

Did I get duped? Wondering if I withhold payment. Thank you for your thoughts.

Duped on all accounts that looks like crap and I don’t think sitting water would cause that.
