    I made maybe 24. This is the last bottle.

    It was designed to have a bit of carbonation, just took a guess and bottled it before fermentation had fully finished.

    I grew the fruit and the honey (Tasmanian Bush honey) came from a neighbour.

    Bottles opened earlier were a bit up front flavour wise, this was the best of the bunch. Much more balanced and refined, similar in nature to a nice late harvest desert wine.
