  1. You'll always get people that think they know better. It's your farm, do what you want with it. They can grow their own stuff and donate it all.

  2. Pumpkin mac n cheese is amazing. Pureed roasted pumpkin thinned with whole milk, add cheddar and gruyere and melt. Delicious!
    Also, try the pumpkin pasta recipe from Becky at acre homestead- scratch pantry has the recipe. AMAZING! I think it's awesome you grew that much! It's wonderful!
    I also cube and can pumpkin, to be used in our homemade dog food! They love it!

  3. Jess you inspired me to make my waiting room my classroom. I started a youtube channel because of you, in hopes that I can make my dreams of a homestead a reality too.   4. Years ago I tried Pumpkin Lasagna. It was a Rachel Ray recipe. I loved it so much I have adapted it to Pumpkin Pizza. The sauce is pumpkin instead of tomato. The pumpkin puree is seasoned the same as you would for the tomato sauce. Mozzarella Cheese, sweet Italian sausage, feta cheese or goat cheese, spinach and caramelized onions. Love your shirt BTW from LL Bean? We live 20 mins from LL Bean in Freeport Maine.

  6. I love your pumpkin throne! I grew a lot this year – pumpkin and squash- and when people ask what I will do with it all I talk about food for me, the chickens and the soil. De seeded Jack O'lanterns make great worm food buried right in the garden beds.
    The ability t see whole picture, systemic influences is a gift. It is rare I think because many people are so caught up in routines that they don't look beyond their own life, perceptions, or the immediate next step. Thanks for explaining it so more people will look up from the routine.

  10. Yep, buck in rut = store bought goat cheese! I just can’t do that flavor after owning bucks either. 😂
    Awesome pumpkin haul, those are beautiful! I am in complete agreement with you when it comes to feeding food we’ve grown back to our animals, it’s never a waste.

  11. Try making chili with it.
    2 ways:
    1. Bake the pumpkin in the shape of a bowl, fill with chili and serve. Individual small pumpkins is best.
    2. Make chili as normal but substitute pumpkin for tomato. If tomatoes cause heartburn especially in things like chili, this solves that issue and tastes great!
