All For Gardening: Trying to harvest seeds from sunfinity sunflowers.

I got a couple sunfinity Sunflowers from Home Depot for a couple bucks each hoping to be able to harvest the seeds. I’ve let them dry on the stock and when I go to open them there’s nothing. Any ideas what I’m doing wrong?
