Stuffed Fig Leaves



Like figs? What about stuffed fig leaves? Did you know that the fig leaf is not only edible, but it has even more health benefits than the fig itself?

Ingredients:
6 -10 fig leaves
1 zucchini minced
1 squash minced
1 cup cooked quinoa or rice
1/2 cup onion minced
2 minced garlic cloves
2-3 sprigs lemon thyme
1 bay leaf
1 lemon
Avocado Oil
1 cup vegetable or chicken broth
Ground beef ( omit if vegan)

– Step 1: Cook quinoa or rice and sit it aside. I like to add lemon slices in the water.
– Step 2: Brown and season ground beef. Use seasoning of choice. Add bay leaf and thyme.
– Step 3: Sauté vegetables with oil and seasoning of choice. I use avocado oil, Himalayan salt and Herb de Provence.
– Step 4: Combine meat, rice and veg.
– Step 5: Blanch fig leaves in boiling salted water for 2-3 minutes.
– Step 6: Take one leaf, shiny side down, and place 1 tablespoon of the mixture at the bottom (stem) end of the leaf. Fold both sides of the leaf towards the center, roll up from the broad bottom to the top, and place into a skillet. Repeat with all leaves, leaving no gaps as leaves are placed in skillet (to prevent from opening while cooking). Drizzle rolls with
avocado oil and squeeze of lemon juice.
– Step 7: Pour in vegetable or chicken broth to cover fig rolls. Cover pot and simmer for about 1/2 hour.
