I love canning. This month I tried a couple of new items to me. 6 pints of homemade salsa, and 16 pints of stuffed cabbage. Both came out perfect.

You have inspired me to can my chicken leg quarters that are in the freezer. So far I’ve only pressure canned potatoes and water bathed cherry jelly. This is a really good idea.
I have found that the flavor and texture of home canned meats is better than the store canned. I like being able to open a jar and whip up a quick meal without the extra time of cooking the meat and it’s perfect for cold dishes…don’t have to wait for the meats to cook.
I noticed in some of the pics that some of the meats were uncooked and put in jars then cooked in the canner. Is is necessary to precook your meat when canning it? I am new to all this preservation stuff. We have gardened, but really only grew enough to eat for each season, now I am leaning toward a larger garden to preserve our own food since I no longer trust ANY of the foods that are mass produced to be truly healthy.

I'm going to do some chicken this year….and some bone broth….Swanson used to make some soup starter broths…a few different flavors….they were yummy….I'm going to see if I can make a delicious flavored broth too!….love the jars that are reused!!… smart!…you can use those for all your dry goods too.😁🥰🥰
I'm loving this manner of canning chicken. I can't stand the raw pack method. I saw chicken germs everywhere when I used the raw pack method..
