Tri Tip Chili



A delicious chili made in the Texas style with no beans. This type of chili was made famous in the early 1900’s in San Antonio by the well known “Chili Queens” who would set up tents and tables and serve chili in the town squares of San Antonio, including the square in front of The Alamo. They were hugely popular between 1890 and 1940. Each family had their own recipe for their “bowl o’ red” served with hot corn tortillas and a drink. Rich and poor alike would sit together in picnic table style to enjoy this delicious food.

2 Large Tri-Tips (2 – 3 LBS each)
2 LBS 85/15 Hamburger
DUMP 1
1 Stick Butter
1 Large Onion, Diced
2 28oz Cans Crushed Tomatoes
2 32oz Boxes Beef Broth
1 7.5oz Can Chipotle Sauce
¼ Cup Worcestershire Sauce
2 PKGS Williams brand Chili Seasoning
2 TBSP Regular Chili Powder
3 TBSP Dried Mexican Oregano
2 TBSP Ground Cumin
DUMP 2
2 TBSP Ancho Chile Powder
2 TBSP Fiesta Chili Powder
2 TBSP Chipotle Powder
2 TBSP Kosher Salt (Coarse Ground)
2 OZ Unsweetened Bakers Chocolate
4 Beef Bouillion Cubes
1/3 C Brown Sugar
2 TBSP Granulated Garlic (or 2 teaspoons Garlic Powder)
DUMP 3:
All Meat
12 OZ Coca Cola
RECIPE :
Smoke tri-tips over charcoal, indirect heat until internal temp is 180F, about 4 – 5 hours. Chop into dices. You can smoke them the day before and refrigerate overnight. Chopping is easier when they are cold.
Cook burger in a separate skillet, drain, set aside.
In a tall stockpot melt butter, then all ingredients from DUMP 1 and mix well. Bring to a boil, reduce heat and low simmer uncovered for 1 hour.
Add DUMP 2. Mix well and continue simmering uncovered for 1 hour.
Add DUMP 3 mix well and simmer uncovered for another hour.
It’s ready at this point.

    But where's the bakers chocolate in Dump 2 ingredients list and when did Coca Cola get permission to be in the recipe?
    I thought it was gunpowder coffee that's used in Texas Style Chilli 🤔
    Is that right?

Absolutely delightfully delicious OH YES Tri Tip magnificence it's just not fair that I live so far away from you RIVET, mind you though if I did live close to you you'd fast get sick of me because I'd be on your doorstep every day hoping for a taste of your culinary wonders!!!
