If it’s still a little firm a couple days on the counter and it will be perfect! Many folks pick them like this a little early as it prevents splitting/cracking.

Nope, it’s perfect. You can harvest as soon as they hit the “breaker” stage (barely blushing) and let them ripen the rest of the way inside. Every time I try to let my Cherokee Purples ripen fully on the plant, they split on me.

All tomato’s can ripen as long as the process starts before you pick it. I do love vine ripened tomatoes, but it’s way better to pick early then lose it! If you store it with other ripening tomatoes it’ll ripen a bit faster than alone.

I have always picked my tomatoes when they are roughly 30-50% ripened. I never do vine ripened as I taste no difference in flavor. I’ll sit them on the counter and let them finish.

I picked all the green tomatoes left on my plants at the end of last year, put em on my windowsill. Thought I would look for a green tomato recipe and lo and behold they all ripened beautifully.
