It’s soo good. (If you like mushrooms, haha!) You can look up some huitlacoche recipes but basically you just sauté it with onion and garlic, then add cilantro and salt to taste. Typically used as a taco or quesadilla filling. The flavor is like an earthy, corn-flavored mushroom.

Just a warning about your corn fungus, only the immature galls are good for eating. Harvest them when they’re green or silver and firm. Mature galls are black and completely full of spores, which is not tasty 🙁
