Are those jalepenos or Serranos? If jalepenos, you could make some candied jalepenos. So delicious and make good gifts.

The poblanos you can chop and eat anywhere you’d put a bell pepper. Soup, stir fry, sausage and peppers, stuffed peppers, grilled or roasted. The jalapeño/ serranos you can freeze whole and pull out to add some kick through out the year. They chop well frozen and will blend into salsas with no change in taste. Don’t feel pressured to use them all at once. I have a couple gallon bags of hots that will last me a year.
